Heat the oven to 400c
Dice the potatoes and sweet potatoes into small cubes
Toss them in a bowl with some paprika and oil of your choice, my go-to oil is always coconut oil
Cook for approximately 30 min tossing them halfway
Cook the shiitake mushrooms in some coconut oil, it gives the mushrooms a nutty taste and both shiitake mushrooms and coconut oil boost your energy or qi
Cut the spinach into strips and the sun-dried tomatoes
Mix the eggs in a bowl and toss in the mushrooms, sun-dried tomatoes and spinach and add a dash of Chile flakes for those people that are feeling cold.
If you would like your eggs fluffy and soft, take them off the heat while they still have some liquid forming on the pan, they will continue to cook in the pan a little and this way you won’t overcook them.
