Warming from the Inside Butternut Squash Soup

This soup is good for those cool winter days and for women and men who are always cold from the inside out.  Butternut squash is around 87% water so it is a great veggie to rehydrate the body and it is full of beta and alpha-carotene which is good for your immune system.  
Enjoy this cozy soup which feels like a hug from the inside.

Ingredients

  • 1 Butternut squash
  • 3 tbsp Olive Oil
  • 2 cloves Garlic
  • 1 thumb Ginger
  • 6 cups Veggie Stock
  • 2 tsp Almond Butter
  • 2 tsp Tamari
  • 1 chile
  • 2 tsp Cinnamon
  • 1 Onion (diced)
  • Crushed Walnuts Garnish

Instructions

  • Preheat the oven to 400c
  • Cut the butternut squash in half and mince the garlic
  • Place the butternut squash on a cooking pan with the skin down and drizzle with olive oil
  • Cook for 25-30 minutes, in the last 10 minutes sprinkle the garlic on top
  • Prepare a frying pan with some olive oil and cook the onions for 3-5 minutes or until translucent
  • Peel the skin off of the butternut squash, cut it up and place in the blender with the rest of the ingredients and add the onions
  • Blend until smooth and then place in a pot and simmer for 10 minutes
  • Serve into bowls and add crushed walnuts on top

Notes

  • Butternut squash is sweet and warming for the spleen and stomach.
  • The warmth of the soup comes from the ginger, cinnamon and chiles which are all warming spices in Chinese Medicine.
  • The walnuts are good for strengthening the kidneys.
  • The almonds are good for the lungs. 
  • This soup is great for any cold symptoms that you might be having, for example, cold hands and feet, sore throat, coughing with white clear phlegm.
