Heat up a frying pan and add ghee ( or oil of choice) add the shitake mushrroms and cook for 3 minutes
In a bowl wisk together the two eggs and once the mushrooms are cooked add them to the egg mixer
Keep your frying pan hot and add the egg mixer to the frying pan and cook for the desire you like your eggs, I like mine a bit runny so I normally cook them for 2 minutes
Toast your bread and then add 2 slices of buffalo mozzarella to the bottom half of the bread
Place the eggs on top once they are cooked ( this is important because the warm eggs will soften the cheese)
Add the sprouts on top of the eggs and drizzle some olive oil on top with a sprinkle of salt
Slice the tomato and add it on top of the sprouts
Then add the arugula and spread the hummus on the top half of the bread
