Healthy Breakfast Sandwich

 

This healthy breakfast sandwich is one of my go-to breakfast meals. It will change your day and increase your energy.

It is a perfect balance of taste and hits all the flavour notes.

Things can become pretty complicated when it comes to what to eat. You can head down a rabbit hole of nutritional facts and opinions about how you should be eating, what you should be eating and when you should be eating. It can all become super overwhelming.

I recommend you spend a few minutes a day checking in with your body and asking it what it needs today. I think you will be pleasantly surprised with the answers that you receive.

When you are craving sweet foods, it doesn’t mean that you should grab a cupcake.

Your body is trying to tell you that you are missing something that contains sweetness, like a sweet potato, carrots or beets.

During the month, women’s hormones fluctuate constantly. Our bodies are always whispering what we need that day and month. We are rushing around and too busy to take the time to check in with ourselves. Something I know for sure is that the body never lies. We just need to get quiet and listen.

My healthy breakfast sandwich is easy to make and delicious. It is a perfect way to find balance and nutrition.

Those That Want to hear it from a Chinese Medicine perspective

Arugula– bitter in flavour and a bit spicy, it helps stimulate digestion and is good for the liver

Broccoli Sprouts– have enzymes that are wonderful for the digestion system. They are bitter in flavour and great for the liver.

Tomatoes– sweet, spicey and a bit acidic in flavour, perfect for the liver, stomach and kidneys. Aids with digestion, so tomatoes are a great thing to eat in the morning to set your digestion up for the day. They clear toxins and heat in the body and nourish the yin. For those of you experiencing hot flashes and anxiety, tomatoes are for you!

Shitake Mushrooms– rich, savoury taste and builds up the immune system. Shitakes tonify the Wei qi and nourish the blood. These mushrooms are one of my favourites to add to my meals. They help with weight loss, high blood pressure and headaches. This all translates as they give you more energy and help boost the immune system.

Eggs– are sweet in flavour, and they supplement qi and blood. Moisten the lungs and nourish the yin.

To summarize, this healthy breakfast sandwich has all the ingredients to give you energy for the day, support your digestive system and nourish the blood.

Healthy Breakfast Sandwich

Ingredients

  • 1 tomato
  • 2 eggs
  • 1 tsp olive oil
  • bunch organic arugula
  • bunch broccoli sprouts
  • 1 tbsp hummus
  • 6 shitake mushrooms
  • 3 slices buffalo mozzarella (optional)
  • 2 slices sourdough bread (your bread of choice)
  • 1 tsp ghee

Instructions

  • Heat up a frying pan and add ghee ( or oil of choice) add the shitake mushrroms and cook for 3 minutes
  • In a bowl wisk together the two eggs and once the mushrooms are cooked add them to the egg mixer
  • Keep your frying pan hot and add the egg mixer to the frying pan and cook for the desire you like your eggs, I like mine a bit runny so I normally cook them for 2 minutes
  • Toast your bread and then add 2 slices of buffalo mozzarella to the bottom half of the bread
  • Place the eggs on top once they are cooked ( this is important because the warm eggs will soften the cheese)
  • Add the sprouts on top of the eggs and drizzle some olive oil on top with a sprinkle of salt
  • Slice the tomato and add it on top of the sprouts
  • Then add the arugula and spread the hummus on the top half of the bread

Notes

I recommend placing the ingredients in the order, as I have explained. It helps to keep the bread crispy and the cheese soft.
This healthy breakfast sandwich will start your day out right with lots of greens, protein and vitamins. It will keep you going until lunch and increases your energy.
Don't be shy about how much arugula and sprouts that you add to your sandwich. A big handful is great!
