Tasty Chickpea Noodle Salad
This salad is refreshing and cooling in nature. The lemon expels heat in the body and brings down inflammation, the sesame seeds are good for the blood and are a great source of fiber. Chickpeas are chalked full of fiber which is insoluble and that means they are very good for your digestive health.
Tasty Chickpea Soba noodle salad
Ingredients
- 1 red pepper
- 1 lemon zest and juice
- 1 can chickpeas
- 1 bunch chives
- 1 bunch arugula
- 1 package Soba buckweat noodles of course you can substitute with gluten free noodles
- 5 tbsp olive oil
- 3 tbsp sesame seeds
- pinch Maldon smoked sea salt
Instructions
- boil a pot of hot water and add the soba needles once the water has come to a boil. You need to be very careful because overcooking these noodles is easy to do and then they become gummy and stick together. I would cook them for 2.5 minutes and then plunge them into cold water. I prefer these noodles cold, they have a silky and nutty flavour.
- Cut up the red pepper into tiny cubes and add the can of chickpeas, chives and arugula to a large bowl. I recommend that you rinse the chickpeas.
- Squeeze the whole lemon into the red pepper mixture and add a sprinkle of smokey Maldon salt and stir it all together
- Add the soba noodles to the bowl and stir together with the olive oil
- sprinkle with sesame seeds and lemon zest of the whole lemon
- A helpful tip is to taste it, you might need to add some more olive oil or lemon depending on the amount of ingredients and your pallette. If you are feeling a bit irritated and moody add more lemon it helps to move the liver energy.
